I was impressed by how much the egg yolks contributed to the body of the soup. I did not want to cook rice separately, so I simmered 1 cup of long grain white rice in the stock for 15 minutes before adding the broccoli and turkey and simmering for an additional 5 minutes. This was the only change I made to the recipe.

An easier variation is to simply heat the turkey stock to a low boil, add a 1/2 to one cup of rice (depending on quantity of stock), and simmer for 20-30 minutes. Then add diced turkey and continue simmering until heated through. Adjust seasoning with salt and pepper. Finish with juice of 1/2 to whole lemon.

Turkey carcass soup...yummy.... ok does this sound better, ''turkey soup''.... imo is better then chicken soup by far.
As if i’m invited to a Thanksgiving Dinner, I always ask if they are not going to use the carcass, please send it my way. Yes it’s a little more work, but the reward is worth it....
and no need to add any other stock besides water and herbs & carrots, onion, celery, s& p. and a pinch of old bay should do it.

I was looking for a Turkey rice soup that didn’t scream Thanksgiving. This is a winner! I used leftover Turkey, leftover rice, and Turkey-duck broth from the Thanksgiving carcasses. Fresh parsley from my garden, the broccoli and the lemon really make this a bright refreshing soup.

Found a half a turkey breast carcass in the freezer and wondered…. What to make? Used carrots instead of broccoli. It was sublime.

Delicious; also used Turkey carcass; didn’t change recipe at all; made brown jasmine rice on the side for the rice eaters in the family; just as good without!

This was delicious. I had turkey stock I'd made from leftover turkey breasts and had a little more than 2c turkey from that, which was fine. Did put a cheese rind in the broth as it simmered which added a subtle & rich flavor. I forgot to pick up broccoli so used the remaining kale I harvested out of our raised beds instead. Put the chopped kale ribs in for a minute before the chopped leaves. Parsley would've been nice, but didn't have any. It was a rich, satisfying soup over the rice.

I used half Sam Sifton shortcut turkey stock (turkey neck and gizzard simmered in 1 qt chicken broth) and half Martha Rose Shulman garlic broth. I cooked 1/2 c long grain rice in the broth, then added broccoli, then just before ready to finish, added the turkey to warm through, then the parsley, and the tempered egg-yolk-lemon sauce. Could also make with chicken broth and chicken instead of turkey. Was delicious, including reheated the next day.

I used home made chicken stock, since we had cooked only a bone in turkey breast.This was a delicious soup! I would use the suggestion to cook the rice in the soup rather than separately next time.

So easy and a great use of leftover Thanksgiving turkey. Substituted baby spinach for the broccoli, added the cooked rice directly into the soup at the end and a pinch of crushed red pepper - delish!

We had an early Thanksgiving with family this year so I decided to make this soup with my leftover turkey and stock. Simple yet delicious. The only changes I made were to add a wild rice blend that remains more firm in leftovers that I cooked directly in the soup and to add a parmesan rind with the stock. PS: freezes well.

This is very good. I didn't have broccoli, so I substituted some greens and it was great. Followed the advice of others and just dropped the uncooked rice in for the last 20 minutes of simmering, then turkey and greens in at the very end. Super easy and excellent way to use leftover turkey!

I followed the recipe precisely and the broth was not nearly thick enough. I think the suggestions below about cooking the rice in the stock instead of separately will make a huge difference in consistency. The flavor was good, though I would suggest adding more lemon juice.

The broth was so comforting, simple, and yummy, the shredded turkey meat almost felt like overkill. I'd try on a rainy day with just the broccoli.

Made this w the rice in the broth as recommended. All I would do differently is maybe 1.5 cup dry rice and 2.5 q broth. Easy and delicious
