Fresh pomegranates are so iconic of Christmas time and are one of my favorite flavours to add to our dishes during the holidays. This homemade pomegranate liqueur is perfect for making a pomegranate martini or mimosa.

With holiday parties just around the corner, I wanted to be sure that we were stocked up on everything that we would need for holiday co*cktails! That’s where this homemade liqueur comes in, I like to make a batch and have it on hand all season long.

What is liqueur?

Liqueur is an alcoholic beverage made of spirits, sugar and a variety of fruits, herbs or spices. It’s often used to sweeten a drink or add flavour to a dessert dish.

Liqueur can be infused with a variety of fruit or herb flavours simply by adding that ingredient to the pot and using a fine mesh sieve to strain it after cooking. Alcohol is then added to the mixture and distilled for at least 24 hours.

Ingredients:

  • 1 cup pomegranate seeds, about 1 pomegranate
  • 1/4 cup white sugar
  • 1 cup vodka

Directions:

1. Cut open a pomegranate and deseed.

Tip: be sure to remove the white skin and extra pith to avoid a bitter taste. The best way to avoid unpleasant bitterness is to make sure that the white part of the pomegranate is not used, a paring knife can help with this.

2. Place pomegranate whole pods in a medium saucepan.

3. Add sugar and cook on medium for 10-15 minutes, stirring occasionally.

4. Use a potato masher to crush the juice from the seeds.

5. Remove from the heat and add vodka.

6. Strain mixture through a fine-mesh sieve, straining out the pomegranate pulp and seeds.

7. Pour the resulting juice into a large jar.

8. Store the final product in an airtight container until ready to use.

Be sure to seal jar and store in a dark place for best results. Homemade liqueur has a shelf life of about six month, longer if stored in the refrigerator.
